Ingredients
Pumpkin Scones
- 1 Cup Cold Mashed Pumpkin
- 1 Egg
- 1/4 Cup Sugar
- 2 Cups Self Raising Flour
- 1 Tsp Salt
- Extra Flour for Dusting
To Serve
- Butter
- Jam
- Whipped Cream
Method
1. Preheat oven to 200°C and lightly grease a baking tray
2. In a large bowl, beat together the cold mashed pumpkin, egg and sugar until combined.
3. Add the self raising flour and salt, then gently mix to form a soft dough. Avoid overworking the mixture.
4. Turn the dough onto a lightly floured surface and gently pat out to approximately 3cm thickness.
5. Cut into rounds using a cutter or glass and place onto the prepared baking tray, about 1cm apart.
6. Lightly dust the tops with flour if desired.
7. Bake for 12-15 minutes or lightly golden and cooked through.
8. Transfer to a wire rack and allow to cool slightly before serving.
Serving Suggestions
- Serve warm with butter and raspberry jam
- Add whipped cream for a classic country-style treat
