Ingredients

Apple Cakes

  • 2 Cups Stewed Apple
  • 3 Cups Self Raising Flour
  • 450 Grams Butter
  • 1 Cup Sugar
  • 2 Eggs
  • 1 Tbsp Milk

Vanilla Glaze

  • 2 Cups Icing Sugar
  • 1/4 Cup Water
  • 1 Tbsp Glucose Syrup
  • 1 Tsp Vanilla

Method

Cake: 

 1. Preheat oven to 180°C and grease and grease a patty pan tray.

 2. Sift the flour into a large bowl, then add the sugar. Rub in the butter using your fingertips until the mixture resembles fine breadcrumbs.

 3. In a separate bowl, beat the eggs well, then stir in the milk.

 4. Pour the wet mixture into the dry ingredients and knead gently to form a soft dough.

 5. Roll out the dough on a lightly floured surface and cut into rounds.

 6. Line the greased patty pans with half of the rounds.

 7. Place a spoonful of stewed apple onto each base.

 8. Lightly moisten the edges of the pastry with water, then cover with another round of dough. Press the edges together to seal.

 9. Bake for 10-15 minutes, or until lightly golden.

 10. Allow to cool before getting them out of the pans.

Vanilla Glaze:

 1. Place the icing sugar in a saucepan and add the water, glucose syrup and vanilla.

 2. Cook over low heat, stirring continuously, until the sugar has completely dissolved and the mixture is smooth.

 3. Remove from heat and allow to cool slightly.

 4. Spoon the glaze evenly over each apple cake and sprinkle with cinnamon.
